Quick and Delicious Salsa:
3/4 cup chopped red onion
1/2 cup minced fresh cilantro
1 can diced tomatoes and green chilies, undrained – I always use Rotel
1 can diced tomatoes with lime juice and cilantro, undrained – again Rotel
1 garlic clove
Throw everything into the blender and pulse a couple of times and DONE!! It has a little kick to it, which is what I like in my salsa! It seems to get hotter with time.
You should know that my hubby is a San Diego boy and takes his Mexican food very seriously. He’d rather eat at home with this salsa then go get any restaurant salsa. I just have to heat his tortilla chips and he is putty in my hands.
This adapted from a Cooking Light recipe from 2002. If you are a calorie counter, here are some nutrition facts: serving size 1/4 cup, calories 17, fat 0g, protein 0.2g, carb 2.8g, fiber 0.3g.

My little guy is a huge fresh salsa fan. I will definitely have to make this for him. So silly but I thought fresh salsa could only be made with fresh tomatoes, now I can have this all year long! So glad I stopped by! Thanks for sharing!
