Chia Seed Pudding

There is Nothing like Fresh Picked Organic Strawberries.

They are Extremely sweet and juicy.

I  recently came across this great blog called Deliciously Organic it is chalk full of great recipes.

One of those recipes is Chia Seed Pudding. Chia Seeds are very healthy and make a delightful pudding you are sure to enjoy!

Ingredients Used:

1 1/2 cups coconut milk  ( we double our recipe )

4 Tbsp Maple Sryup

1 Tbsp Vanilla Extract

1/3 Cup Chia Seeds ( can be found at your local Whole Foods or here )

Directions:

Whisk Coconut Milk, Maple Syrup and Vanilla until smooth. Stir in Chia Seeds until smooth. Divide mixture into serving bowls or glasses and let sit at room temperature for 2hrs. ( because we are experiencing high temps I placed  ours in the fridge and served )

Best if eaten within 24hrs.

Garnish, Serve and Enjoy!!!

It’s Sad to think Summer is coming to an end. But on the other hand I could use some Cooler weather these days.

    I am showing my ignorance but I have never heard of Chia seeds. It looks like they swell up kind of like tapioca pudding? I am going to have to look for them now- xo Diana

      Our first Chia Seed pudding was actually with Raw Cocao powder ( the kids LOVED it ) they wanted to try Vanilla this time. They want to try Vanilla and Cinnamon next time…. :)

      If you like Tapioca Pudding you will love this. What’s nice about the Chia Seeds is they are in a Raw form and you don’t have to heat it up to make the pudding so you are able to preserve all the Good Health benefits. Hope you give it a try :)
