DIY Pickled Beets

 Beets.

Are certainly not everyone’s first choice when it comes to vegetables, however they do carry quite a bit of health benefits.

So you may want to consider giving them a try. We LOVE to Juice and Pickle them.

Recipe:

6 medium to large fresh beets, scrubbed and tops cut off.

Put beets in a large saucepan or stockpot and add enough cold water to cover them with 3 inches over the top. Bring to a boil, then turn heat down to maintain a slow boil. Cook until beets are tender when pierced with a fork, about 40 minutes. Pour water off and let beets cool.


Peel skins off once the beets are cool enough to handle. Slice and place into a jar.

2 cups Sugar, 2 cups Apple Cider Vinegar, 2 cups Water, 1 1/2 tsp salt and 2 cinnamon sticks

Place the sugar, cider vinegar, water, salt, and cinnamon sticks in a smaller saucepan. Bring to a boil and simmer for 15 minutes.


 Pour this pickling liquid over your beets in your glass jar, cover with a lid and refrigerate. Let the beets sit at least a week before tasting.

It wasn’t until after I took the photo that I realized there was a shape left on the plate from the pickled beet juice. We all thought it was quite Perfectly Sweet, being that we Love pickled beets.

    I wish I knew how many beets we put up when I was a kid. My father loved them and ate them with just about every meal. lol He even liked them hot and buttered. For years I could not look at one but in the past two or three years I have started eating them again. Great tutorial here- xo Diana

    This is a perfect recipe to make for the holidays! i can make them a head and then just re warm them! Wonderful and I so appreciate this. I love beets, and this sounds so fun and good.
