Being Gluten Free isn’t always easy but it can prove to be even more of a challenge when you have little ones that have to be on GF diets.
We are so thankful for companies like Udi’s that make being GF just that much easier.
They offer a wide variety of TASTY products that are sure to please even the pickiest of eaters!
Udi’s Pizza Crust is one of our sons favorites however just like most of you he uses it to make, PIZZA!!!
So how was I going to make this into something holiday-ish.
Then it came to me. Make a Sweet Pizza.
I always have plenty of Coconut Milk , Chocolate Chips and as of right now I have some GF Candy Canes on hand.
I took about 1 1/2 tablespoons of melted butter and spread it on my Pizza Crust. Baked it for about 8 minutes at 375 degrees.
(be sure to check on your crust as every oven runs differently)
I melted my GF Chocolate Chips ( which melt VERY quick, so be sure to stir constantly). Spread your chocolate onto your GF Pizza Crust.
I had put a can of my Coconut Milk in the Fridge the day before. The cream will become solid and separate from the liquid. Scooping out ONLY the solids and leaving the liquid, is very important.
Put your solid cream into your mixer and mix on high. I sweetened mine with about 1tbsp of Maple Syrup. Mix until soft peeks are formed.
I layered my Coconut Whipped Cream onto the chocolate covered Pizza Crust and garnished it with my GF crushed candy canes.
This was not only a HIT with our GF son but it was a HIT with the whole family.
And…
That truly is saying a lot!!

Oh Ruby! This looks soooo yummy! I just made a GF dark chocolate peppermint fudge last night, I wish I could send you some, but it needs to stay refridgerated.
