Gluten Free Ice Cream Cone Cupcakes.
I remember one Classroom party in particular. I was in the 6th grade and it was one of my classmates birthday. In typical BIRTHDAY fashion, her mom showed up during the school day, bearing Delicious Birthday treats for the whole class to enjoy. I will NEVER forget seeing these UH-MAZING cupcakes, they looked just like, REAL ice cream cones! WHAT!?!?! I was so perplexed at how my friends Mom, got these CUPCAKES into the Ice Cream Cones. I just had to know how this was accomplished, so I went up to her and asked, “How did your Mom get the cupcakes into the cones?” her response wasn’t what I expected. Finding out that she BAKED them inside the cones, seemed like a MIRACLE to this 6th grader.
Needless to say, her Mom wasn’t just a GREAT mom she was a SUPERMOM in my eyes.
As I got older and went on to have my own family, Ice Cream Cone Cupcakes, were No doubt, on my to do list. They have found themselves on the Dessert table many times since and the kids LOVE them!
Since being Gluten Free, these cupcakes have seen a slight bit of a make over. Not to much, though! They are virtually the same, only thing, they are made using GLUTEN FREE products. Not so scary!
Making them GF hasn’t changed the excitement or love for this Special treat.
They are so much FUN to make as well as SUPER easy !
For these particular, Gluten Free, Ice Cream Cone Cupcakes. I used Glutinos Muffin Mix. I followed the Baking Instructions on the package, PLUS, added 1/2 cup Organic Yogurt and 1tsp Vanilla.
We filled are Cones a little more than 1/2 way full. Baked them according to the baking time. This may be vary according to your ovens temp.
We let them cool, then topped with Organic Valley Cream Cheese, turned into Frosting.
(colored with Vegetable Food Coloring)
These would certainly make ANY gluten free, birthday party that much CUTER and so much FUN!
You can add GF Chocolate Chips for some added fun and flavor.
These Gluten Free, Ice Cream Cone, Cupcakes are sure to FLY off the table so be prepared to make plenty of them.
